Put together one or more days of outdoor education in various disciplines. Maybe start the day with a canoe trip. Come back to camp and work on camp craft. Head out for a hike after lunch. Cook over an open fire. Spend your first night camping. Or whatever you like! Let's plan out your academy!
Get your home schoolers outside and interacting with other home schoolers. Coordinate outdoor education activities with your curriculum. Have students practice leadership and "followership" in a group setting. The outdoors can be used as the basis for almost any subject: science, math, literature, history, physical education, art, and religion.
